The uncertain climate of our region along with the demands of the terroir, require year round maintenance. 

Throughout the year, the vines are surrounded by intensive care: pruning, disbudding, tying, trellising and trimming allow us to ensure the quality of our grapes.

harvest

Harvesting takes place towards the end of September, one hundred days after flowering. Grapes are harvested by hand only to examine the quality of the grapes. As a result, the green or damaged grapes are eliminated.

pressing

In the hours following the harvest, the grapes are placed in wide and low presses in order to prevent the juice from changing color due to contact with the skin of the black grapes.

Immediately after pressing, the grape juice or must goes into vats of "settling", called "crus d'origine", for the first fermentation that will turn the grape juice into wine.

THE ASSEMBLY

The different wines are then tested during the winter by our oenologist. In the spring begins the elaboration of our wines of champagne.

Following principles developed in the 17th century, our oenologist assembles several wines: same "crus" or nearest "crus", wines made from black and white grapes and wine from different years to obtain a subtle and refined wine.

BOTTLING

When our cuvée is constituted, the wine is then bottled, sealed and is laid on lattes in our cellars where the champagne is perfected and monitored continuously.

Cellar Aging

In the dark, the transformation of sugar into alcohol and carbon dioxide creates foam bubbles.

The gas remains trapped and give the fine bubble, the personal charm of our champagne.

When the foam creation is finished, the bottles stay in the cellar for a minimum of 3 years for our cuvée Brut and even more for our vintages Millésime and Grande Réserve.

Riddling

The riddling by hand takes place after this long period and is necessary to the placement of the deposit in the neck of the bottle. This residual deposit is the result of the second fermentation and is eliminated during the disgorging phase.

All that remains is to dress our bottles so they are ready to join you and celebrate all your occasions.
